Doesn’t Friday feel fantastic?
Why not? Every day of the week kinda feels fantastic to me as the years creep up on me via candles on my birthday cake!
Been an outstanding week here.
Stacy, her husband, Rick, and I traveled to the Texas Fair yesterday prepping for next Friday’s post.
Rick was our chauffeur and also our navigator throughout the vast fair grounds and sea of people as Stacy and I were on task and looking for those who were sporting Flair at the Fair!

Absolutely a don’t wanna miss episode!
It was a ton of fun and so many happy faces.
We enjoyed the best fair food – just gotta do it when you’re in the land of the state fair.
That being a corny dog – with mustard!
Did not disappoint.
I could eat these particular corny dogs every day of the week – good news I can’t, or my waist would be the size of one of my large tree trunks around here. Ha.
So Stacy bought our corny dogs and she, Rick and I looked for a spot in a designated common area under shade trees for sit and eat.
Numerous picnic tables were already fully seated with fair goers enjoying their lunches.
However, one of the picnic tables had enough space for three.
There were only 2 geltlemen seated at the table.
A law enforcement officer on duty and a Viet Nam Vet had already claimed the table.
They graciously gave us the okay nod to sit down at the table with them.
So we did.
Super felt special as we hung out with them, eat our corny dog lunch and chat away.
Memorable.
I’d forgotten how cool it is to participate in the total value of an afternoon at a state fair.
People are cool, happy and enjoying the day with a bunch of strangers enjoying the same.
Memorable.

I’m thinking this Supreme Pizza Soup is right up my alley — or possibly overtake Cheeseburger Soup in the passing lane!

Hello!
I want to share today some quick, easy and delicious food items I have recently discovered.
PIC 1
Are these canned beans made by Serious Bean Company – “Dude Perfect” Jalapeno and Bacon Pinto Beans.
The beans are not mushy like some canned beans.
They have a nice firmness to them and the sauce is Bacon and Jalapeno flavor, but not too spicy.
The Suckle Busters Honey BBQ Rub was a gift from my son. He bought it at Cabela’s.
I found it on Amazon, as well.
I have used honey barbeque rubs before — but never one this delicious.
I have used it on chicken wings, drumsticks and strips.
I doused my chicken with a little olive oil and then sprinkled a generous amount of rub on the chicken and cooked it in the air fryer. The outside of the chicken was so crispy and flavorful!
The third item in this picture – Specially Brand Premium Kale Pesto sauce.
This sauce is so thick and rich and tasty.
If someone told me they made it from scratch, I would believe them. The pesto sauce is that good.
I bought this at ALDI which — by the way — I have become an ALDI junkie.
They don’t always have this particular sauce in stock, so when I do find it — I stock up.
I seriously have like 6 jars in my cabinet right now.

Are the drumsticks with the Honey BBQ Rub plus the Jalapeno Bacon Beans.

Are the chicken strips with the same rub and the Kale Pesto sauce I used as a dipping sauce with sourdough toasted bread sticks?
This sauce is delicious on pasta as well.
It is pretty thick so you may want to thin it down with a bit of tomato sauce when pouring over pasta.
I told you earlier I am an ALDI junkie. I find such great and different food items there.
They also have a wonderful cheese selection.

Are two more ALDI items I have recently discovered.
The freezer Rana meat lasagna is the bomb. I have purchased this 3 times now.
The Priano frozen Italian style meatballs are perfectly seasoned and are so delish!
I prefer to bake them in the oven instead of using the microwave so I get crispy, browned meatballs.
I also prefer the lasagna baked versus the microwave.
I love to cook from scratch but for a quick fix — I love these food items!
I will share in future columns my new ALDI finds and please share in the comments your favorite ALDI discoveries.
Also, ALDI prices are very reasonable!

A mature lady gets pulled over for speeding.
Older Woman: Is there a problem, Officer?
Traffic Officer: Yes ma’am, I’m afraid you were speeding.
Older Woman: Oh, I see.
Traffic Officer: Can I see your license please?
Older Woman: Well, I would give it to you but I don’t have one.
Traffic Officer: Don’t have one?
Older Woman: No, I lost it 4 years ago for drunk driving.
Traffic Officer: I see. Can I see your vehicle registration papers please.
Older Woman: I can’t do that.
Traffic Officer: Why not?
Older Woman: I stole this car.
Traffic Officer: Stole it?
Older Woman: Yes, and I killed and hacked up the owner.
Traffic Officer: You what?!
Older Woman: His body parts are in plastic bags in the trunk if you want to see.
The traffic officer looks at the woman and slowly backs away to his car while calling for back up. Within minutes 5 police cars circle her car. A senior officer slowly approaches the older woman’s car, clasping his half drawn gun.
Officer 2: Ma’am, could you step out of your vehicle please!
Older Woman: Is there a problem sir?
Officer 2: My colleague here tells me that you have stolen this car and murdered the owner.
Older Woman: Murdered the owner? Are you serious?!
Officer 2: Yes, could you please open the trunk of your car.
The woman opens the trunk, revealing nothing but an empty trunk.
Officer 2: Is this your car, ma’am?
Older Woman: Yes, here are the registration papers.
The Traffic Officer is quite stunned.
Officer 2: My colleague claims that you do not have a driving license.
The woman digs into her handbag and pulls out a clutch purse and hands her license to the officer.
The Officer examines the license quizzically.
Officer 2: Thank you ma’am, but I am puzzled, as I was told by my officer here that you don’t have a license, that you stole this car, and that you murdered and hacked up the owner!
Older Woman: Bet the lying so and so told you I was speeding, too.

SUPREME PIZZA SOUP
Finally! A soup that kids and adults love equally. Pizza favorites like sausage and pepperoni will have the kids jumping for joy. And with all the big chunks of fresh vegetables, Mom and Dad will be happy too.
HERE’S HOW WE MAKE IT
IN A MEDIUM TO LARGE POT WITH A LID:
- Brown in 2 TBSP olive oil 1/2 pound bulk Italian sausage
- 1 – 6 ounce package of pepperoni, diced
ADD AND SAUTE
OVER MEDIUM HEAT:
- 2 cups fresh mushrooms, sliced
- 1 cup red onion, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1 TBSP garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and Pepper to taste
STIR IN:
- 3 – 14.5 ounce cans of diced tomatoes in juice
- 1 cup chicken broth
- 1/2 cup canned black olives, halved
BROWN:
- Sausage and pepperoni in oil in a large pot over medium-high heat — about 8 minutes
- Drain on a paper towel-lined plate
- Pour off all but 1 TBSP drippings and return pot to burner
- Return pot to burner
ADD:
- Add mushrooms and saute until they release their juices — about 3 minutes
- Add onion, bell peppers, garlic and seasoning
- Cook until vegetables are soft, about 10 minutes
STIR IN:
- Remaining ingredients along with the reserved meat mixture
- Simmer soup until its heated through
- Remove from heat and ladle into bowls
- Serve with slices of fresh oranges and apples

What a fun issue! Description of Fair food brought back fond memories of grade school and high school days when I just thought corny dogs were delicious REQUIRED Fair food and didn’t feel guilty about eating them. Journeying back to those wonderful carefree days and definitely going to have corny dogs on my next visit!!!
Stacy’s fabulous food finds are just that – FABULOUS! I also like to cook from scratch but it’s really wonderful to have on hand some items for a quick meal when time is short or for a just-too-tired-to-cook dinner. Thanks for the tips. Look forward to more Aldi finds!

Daymaker’s Stacy ‘s comments always catch my eye. I’m familiar with her suggestion of Rana meat Lasagna. It is a 10! As for her Serious Bean Company with jalapeño and bacon beans. Ive just got to find that brand as it will go with hamburgers and State Fair corny dogs perfectly. Now Daymaker, you always come up with thought provoking questions. Today’s “What will you never give up on” causes great provoking thoughts. Hmmm, oh there’s several such as my grandchildren but I’m landing on God. I’ve learned through the years that He is truly in charge, and He always, even though too often too slow for me, produces the BEST. Yep, that’s my answer.
