GRILLED LEMON CHICKEN
There’s no denying that something awesome happens to chicken when it’s teamed with lemon and pepper and cooked on the grill. This marinade has it going on!
Hot off the grill as a sandwich, sliced and placed on top of a fresh salad or as a light dinner with a side of rice and asparagus.
MARINADE:
- 1 cup lemon juice
- 3/4 cup good quality olive oil
- 1/4 cup vegetable oil
- 2 tsp. salt
- 1 TBSP pepper
- 2 TBSP fresh thyme (or 1 TBSP dried Lighthouse brand is king)
Put all ingredients in a Ziploc bag and shake until well combined.
- 3 pounds boneless, skinless chicken breast
Add chicken to bag of marinade. Chill in fridge for 2 hours. Overnight is even better.
Prepare grill and cook chicken.
