Slow Cooker Chicken Enchiladas

Slow Cooker Chicken Enchiladas

Hello Monday and hello friends –

How was your weekend?  Mine was uneventful and productive.
My favorite combo for a weekend for sure.

Had a great conversation with Stacy yesterday evening.  She and her husband had just returned from a restful, wonderful short vacation and she wanted to catch up and run some ideas for her STACY’S WORLD column by me ((coming this Friday!)).
Of course, I love all of her clever, creative ideas!
This Friday’s STACY’S WORLD is an absolute don’t wanna miss read.

And during the course of our chat we discussed Daymaker’s – Top of the Morning format.

T’was a valuable, collaborative visit as we continue to strive to create a happy streamline experience for Daymaker readers.

Presenting the new and improved format for Top of the Morning!

Collected these treasures to share today:

BEGINNING WITH:

  • Do you have a preferred pen you reach/search for when there might be a choice of 2 or 3 in the pen/pencil mug or in a drawer around the house for writing lists?
Me?  Mine has always been the Bic Pen.  I don’t know why.
I’ll pass up a fancy, fine calligraphy type of pen and go for the inexpensive familiar Bic pen every time!
    Ha
    How about you?
This little video is quite fascinating!  And the number of pens produced worldwide to date is quite mind blowing.

  • Got Bees?

I do.  Not only the ones that go from flower to flower – but – I also have the ones that actually burrow in a pretty good size hole IN the ground.
Yep and Yikes!  And they can be aggressive as they buzz about.
And, indeed, they can certainly be an annoying drag when hanging out on the deck or patio as the cooler temperatures roll in — buzzing around, landing on drink glasses or lunch or dinner plates.
So this article totally caught my attention.

  • Amusing Anti-Cheating hats

These kids should get an A+ for their creativeness and – double plus – they’ve already got a little something race-ready for upcoming Halloween trick or treating!
I loved all of the hats, however, gotta say the dude wearing the chainsaw hat was my particular favorite.

  • I Never Tire of Seeing Clever Signage here/there/everywhere!

And this restaurant’s signage never disappoints.
    Funny tongue-in-cheek greatness.
Loving the one best that reads, “When Is Old Enough to Know Better Supposed to Kick In?”
Hat tip El Arroyo!  You bring laughter to us.
THIS FANTASTIC RESTAURANT HAS THE BEST, MOST CLEVER SIGNAGE OF ALL

  • RECIPE (!)

I think it would be hard to find someone who doesn’t enjoy a great enchilada.
And imagine making them in a slow cooker?!
    Love it!
And the reviews totally give these enchiladas a kiss of affection and seal of approval!

  • RECIPE (!)

As soup season slides in with Autumn, this Mexican Vegetable Soup is certainly on my radar!

Another winner-winner soup for dinner recipe.
Broccoli Cheddar Soup using a potato base instead of flour and extra butter.  Whoa!

  • RECIPE (!)

    Gotta check this recipe out.
Had me at Gooey.  Mozzarella.  Biscuits.
I’m absolutely thinking serving these little side-kicks with soups, stews or salads would be the bomb-a-reno!

  • RECIPE (!)

Apple pie, Apple crisp, Caramel apples …
    But Apple Cobbler?
    New to me.
    Intriguing!
And the reviews take any doubt out of my mind that this cobbler recipe cannot be anything but outstanding!

Wow! Love the new look! Didn’t have a problem navigating the original, but this is so. much. smoother. Nice!!!

Always appreciate the wit and wisdom of El Arroyo. These are some of their best! Especially the one about not minding growing older but the body rebelling 😉

Eighteen Thoughts should be required daily reading – for everyone!!!

Thanks, Daymaker, for your inspirations for the week ahead.

When I came to Daymaker’s BIC pen comment, I looked to check my brand and it too was BIC.

I discovered something recently that every ball point pen lover needs to know — when your ball point pen appears to be dried out, it’s likely NOT! Simply press the pen’s tip FIRMLY on a notepad and swivel it about until the tip starts rolling and the ink starts flowing! And here I’ve thrown many ball points away thinking they sat too long in the “coffee mug”.

    PS:
I loved the classic dancing with happy music PLUS pondering the 15 Tips statements. Onward!
