Good day to celebrate the end of the work week and toot-toot let the weekend begin!
I have one B and 2 F’s on my to-do list before I can totally chill for the weekend.
Those being to clean:
- Bathrooms
- Fridge
- Floors
Simple Simon and it’s gonna feel awesome when all 3 are checked off the list getting race-ready for Saturday and Sunday.
And don’t forget (!) Sunday is the official First Day of Autumn kick-off date.

AUTUMN OATMEAL SPICE CAKE
WITH LAZY DAISY ICING
Is so simple and so lip smacking delicious.
Just gotta make it.
I’d be shocked if you don’t fall in love at first bite and put it on rotate from here forward for a go-to, have a little something sweet in the cupboard anytime – breakfast, lunch, dinner, midnight snack attack!
Or surprise a neighbor and friends with a plate full of giant squares.

WET PANTS

Come with me to a 3rd grade classroom —
There is a nine-year-old kid sitting at his desk and all of a sudden there is a puddle between his feet and the front of his pants are wet.
He thinks his heart is gonna stop because he cannot possibly imagine how this happened.
This has never happened before, and he knows that when the boys find out he will never hear the end of it.
When the girls find out, they’ll never speak to him again as long as he lives.
He puts his head down and prays this prayer:
Dear God,
This is an emergency. I need help now. Five minutes from now, I’m going to be dead meat.
He looks up from his prayer and here comes the teacher with a look in her eyes that says he has been discovered.
As the teacher is walking toward him, a classmate named Susie is carrying a gold fish bowl that is filled with water. Susie trips in front of the teacher and inexplicably dumps the bowl of water in the boy’s lap.
The boy pretends to be angry, but all the while is saying to himself, “Thank you, Lord! Thank you!”
Now all of a sudden, instead of being the object of ridicule, the boy is the object of sympathy.
The teacher rushes him down the hall and finds him a pair of gym shorts to put on while his pants dry out.
All the other children are on their hands and knees cleaning up around his desk.
The sympathy is wonderful.
But as Life would have it, the ridicule that should have been his — his has been transferred to someone else.
Susie.
She tries to help, but they tell her to get away.
“You’ve done enough, you klutz.”
Finally, at the end of the day, as they’re waiting for the bus — the boy walks over to Susie and whispers, “You did that on purpose, didn’t you?”
Susie whispers back, “I wet my pants once, too.”

AUTUMN OATMEAL SPICE CAKE
WITH LAZY DAISY ICING
This is an old school recipe I have in my recipe box – tattered little card in my grandma’s familiar handwriting – and Grandma made it frequently, so did my mom and so have I. It’s by no means any culinary-baking 5 star restaurant sort of thing. It’s just plain easy-peasy, good, moist and delicious. I think Grandma may have gotten the recipe from the back of the familiar round, cardboard oats container.
HERE’S HOW THE RECIPE CARD READS:
PREHEAT OVEN TO 350*
- In a large bowl, pour 1 1/3 cup boiling water over 1 cup old fashioned oats and one stick of butter, cubed, with 1/2 tsp salt
- Let stand about 5 minutes until oats are soaked and cubed butter is melted
- Stir all together
NOW STIR IN:
- 1 cup dark brown sugar
- 1 cup white sugar
- 2 eggs, well beaten
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 1/2 cup flour
POUR BATTER INTO
- A 13′ x 9″ cake pan
- Bake for 30 minutes
- Do not overbake
REMOVE FROM OVEN
And let set on stove top to cool a bit
MAKE THE LAZY DAISY ICING:
IN A SMALL SAUCE PAN OVER MED-HIGH HEAT
- 3/4 cup evaporated milk
- 3/4 cup brown sugar
- 1/2 stick butter, cubed
- 1 tsp vanilla extract
- 3/4 cup coconut
BRING TO A BOIL STIRRING FREQUENTLY
For about 5-7 minutes
POUR ICING OVER COOLED CAKE

The Oatmeal spice cake recipe is my kind of recipe – quick to go together and oh-so-delicious! This is perfect for fall.
My top 3 are much the same as yours: smile, hug, sincere compliment or encouragement – depending on the situation.

I love the article on “over 100 years ago” in the U.S. That was my Mom’s childhood and oh the wonderful stories I recall her telling us about the first phone line, first car etc. She even mentioned as an adult living in the 50’s and 60’s in Montana that there was no speed limit. It was easy to drive 90 MPH or 100 or 55 if you wished. Keep in mind Montana is the 4th largest state in the US. That’s a lot of ground to cover. So what am I doing this weekend? Making Daymaker’s Lazy Daisy Cake recipe mentioned today.. That sounds so good, moist, and EASY plus a bonus of coconut icing. I’m freezing individual pieces and let the good times roll!
The oatmeal cake with the coconut frosting Yummo doesn’t get much better than that❤️
