A dessert like I have never tasted before.
As in cottage cheese ice cream.

What?!
I know, I thought the same.
Until Stacy brought over a couple of samples one day when we were hanging out and she told me about her column she was planning for today.

I Could. Not. Believe. This. Was. Not. Ice Cream.

First spoonful was like “Wow”
Second spoonful was, “No way this is cottage cheese.
I know and like cottage cheese a lot — but no way what I’m tasting in these spoonfuls is cottage cheese.”

She said, “Yep.”

Indeed, it totally was.

Howdy!  Howdy!

So last week I had an unexpected day off from work because of icy, snowy weather predictions.

I am thinking to myself …
Stace, do something productive with this bit of time off work.

Hmmm …
1) Clear out my gift wrapping cabinet?
or
2) Make homemade ice cream?

The ice cream idea won … imagine that!

There has been a lot of talk at my salon about this healthy, surprisingly delicious ice cream made with cottage cheese.
Yes, I said cottage cheese.

So I Googled cottage cheese ice cream and literally hundreds of recipes popped up.

This ice cream is super trending right now.
Everyone has their own special blend.

You can make this very healthy by adding fruits and nuts — or not as healthy by adding cookies or candy bars.  haha

I decided to try both so I headed to the kitchen to see what I could find and throw together.

Like I said earlier, everyone has their own special blend — but for the most part to make your base for the ice cream —

YOU BLEND TOGETHER:

  • 16 ounces cottage cheese
  • 3 – 4 TBSP honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp olive oil (this adds some healthy fat to the ice cream and makes it creamier)

You then add whatever else you want to flavor your ice cream or just enjoy the plain vanilla you’ve already made.

THIS IS WHAT I MIXED TOGETHER:

(I split up the cottage cheese to make 2 batches)

1st BATCH

  • 8 ounces cottage cheese
  • 1/2 tsp vanilla extract
  • 1/2 tsp olive oil
  • 2 TBSP honey
  • 1/2 banana
  • 2 TBSP shredded coconut

I mixed all of this together at the same time.
Then I stirred in chopped walnuts (saving a few pieces to add to the top of finished product in containers)

This batch turned out perfect!
I would not change a thing.

2nd BATCH (not so healthy)

I saw a recipe online where they added peanut butter and chocolate chips to their ice cream that sounded really good.
This could also be very healthy if you used healthy peanut butter and healthy chocolate chips (which I did not have on hand).

However, I know where my hubby hides his secret stash of Reese’s Peanut Butter Cups.
You can’t fool me, Hon.

So, I grab a few and decide to try these out in the ice cream.

AND HERE IS WHAT I MIXED TOGETHER:

  • 8 ounces cottage cheese
  • 1/2 tsp vanilla extract
  • 1/2 tsp olive oil
  • 2 TBSP honey
  • 2 Reese’s Peanut Butter Cups

I just used my Magic Bullet to puree my ingredients – since I made small batches.
You can also use a blender to puree your ingredients.

My blended goodies in small containers ready to cover and put in the freezer for 4 hours.
(( I suggest you use small 1-2 serving(s) containers because this ice cream freezes hard and you’re going to have to thaw it out for 20-30 minutes before you eat it. ))

Cheryl and my husband really liked the Reece’s ice cream.
I thought it was okay – but I, personally, think it would have been a little bit creamier had I used real peanut butter and more chocolate-ly had I stirred in chocolate chips.
Just my opinion.

Like I said — everyone can customize their ice cream and the base of the cottage cheese ice cream is full of protein.

This recipe is quick and easy.  It only takes a few minutes to throw your ingredients in a blender.

    WHAT DO YOU BELIEVE IN THAT OTHERS MIGHT NOT? Well, first of all, Stacy’s cottage cheese ice cream! As I read it today, my first thought was that my beloved nightly bowl of ice cream has been messed with… but then I thought what’s the ingredients in cottage cheese that might make it acceptable? Skim milk and a tad of sugar! OK OK, Stacy’s on to something here! Love it!

    Cottage cheese ice cream…the mind boggles at the possibilities…healthy enough to top with fruit and/or granola and voila! Breakfast fit for a queen! Thanks, Stacy. And thanks Cheryl and Rick for taste-testing. Tough job, etc., etc.

    That cottage Cheese recipe looks really good especially with it being so few calories versus regular ice cream.
