Happy Friday greetings, friends.

As it turns out — this will be the last post I will make on Daymaker.
Hard decision.

I thank all the Daymaker cheerleaders (Carol, Marty, Stacy, J, Trent, Chris, Laurie, Cynthia)  and all friends for the past 2 + years for standing with me and my Daymaker dream.  I am so grateful.

Huge hat tip to Stacy and Stacy’s World for adding so much cool value to Daymaker and not even seeing a single, shiny copper penny for her time.

IT’S HARD TO WAIT FOR SOMETHING YOU

BUT IT’S EVEN HARDER TO GIVE UP WHEN
YOU KNOW IT IS EVERYTHING YOU WANT.

PASTA, PESTO AND PEAS

“This famous Barefoot Contessa recipe originally came from my wonderful friend Brent Newsom.  In order to keep the pesto from turning brown, he adds spinach and lemon juice.  To make a delicious and easy one-dish summer lunch, use your imagination and add grilled chicken or fresh salmon.”       Serves 12

HERE’S HOW WE MAKE IT
INGREDIENTS:

3/4  pound fusilli pasta

3/4 pound bow-tie pasta

1/4 cup good olive oil

1 1/2 cups pesto

1 10-ounce package frozen, chopped spinach, defrosted and squeezed dry

3 TBSP freshly squeezed lemon juice

1 1/4 cups good quality mayonnaise

1/2 cup grated Parmesan cheese

1 1/2 cups frozen peas, defrosted

1/3 cup pine nuts, toasted (optional)

1 tsp salt

1 tsp ground black pepper

NOW WE

Cook the fusilli and bow ties separately in a large pot of boiling salted water for 10 to 12 minutes, until each pasta is al dente.

Drain and toss into a bowl with the olive oil.

Cool to room temperature.

NEXT

In the bowl of a food processor fitted with a steel blade, puree the pesto, spinach, and lemon juice.  Add the mayonnaise and continue to puree.

Add the pesto mixture to the cooled pasta, then add the Parmesan cheese, peas, pine nuts and salt and pepper.

Mix well, season to taste and serve at room temperature.

    Sweet Daymaker, thank you for the fun we have had in reading your blog. I’ve fixed lots of delicious recipes and will continue to use my favorites. I’ve laughed at the cartoons, pondered the many stories, and enjoyed you sharing your vast knowledge of the film business. Because of you, when a movie or TV show is over I actually hang out reading credits because I’m fascinated with the titles and skills of so many. And speaking of skills, I loved Stacy and her variety of creativity. So to think Daymaker has come to an end is not exactly true. The fact is we’ll carry bits and pieces of Daymaker into our days ahead. A round of applause to you Cheryl. Love you.

    My friend…sad for you, I know this must have been a difficult decision for Daymaker to see its last sunset.
