KEVIN PIETTE – PARAPLEGIC CARRIES THE OLYMPIC TORCH, GIANT SAND BEACH ART SCULPTURES, ELUSIVE BEAUTIFUL INSECTS, PINEAPPLE WHIP RECIPE

Monday’s back!
Last Monday of July 2024.

Hope all had a great weekend.  I sure did.

As many of you know, Friday was my birthday.

Stacy treated me to an extraordinary lunch at a very upscale Mexican restaurant + brought a bag of cool gifts!  We’re talking body spray, scarf to wrap on my bag, a super cool market bag that looks like an old school brown paper bag – but not,  candles …
We hung out and enjoyed each other’s company and Cervezas for several hours and found laughter – lots of it.

And then Carol and Toby rolled up in their Rolls Royce bearing gifts – a beautiful bouquet of flowers – colors of lime green, lavender, peach and white in a keepsake tea cup + Carol’s one-of-a-kind piece of watercolor art birthday card featuring a lineup of cowboy boots (I will be framing this card and find a perfect spot for it) + a fabulous, decorative recipe box that I will put the best of the best recipes in it.

My mom and sisters gifted me the cutest skirt EVER from Title Nine.
Pretty sure I’ll be sporting that skirt for the rest of the summer and probably into fall.

AND!!
So many texts + calls from friends and family (songs) wishing me a happy birthday.
I love and adore you all.

I am so spoiled!
Feel like royalty.

Thank you Stacy, Carol and Toby, and Beautiful Friends and Family for your giant love remembering my day.
Bet Mick Jagger didn’t have such a grand day as I!

Yep, it’s warm (some whine –  hot) around these parts.
Same as I’m guessing around your neck of the woods.  Ha!

It’s the end of July about to be August.
It’s a given that the thermometer and outside the door temperatures let us know it’s just that time of year.
Just like this time last year, and the year before, and the year before that, and
Zero chance it’ll be sweatshirt weather next week – not so fast – but coming soon.

Collected these FASCINATINGS to share today!

BEGINNING WITH:

KEVIN PIETTE – PARAPLEGIC MAKES HISTORY –  TENNIS PLAYER WALKS UPRIGHT IN A PERSONAL EKOSKELETON
Carrying the Olympic torch.
Stole my heart.  Just look at Kevin’s smile!  And his heart walking that torch.
Honor for him and an honor for the Olympic games that he walked it.

ARTIST JANEL HAWKINS USES THE BEACH AS HER CANVAS/SCULPTURE STUDIO
Just WOW!

FRANK DESCHANDOL’S
Photos of elusive insects.  Absolutely mesmerized me.
How mind blowing beauty-full are these “insects?”
I’m gonna be on the look out for one or more and will absolutely not be inclined to run, scream or squish!

HOW TO FOLD PANTS AND JEANS
I personally love the roll and tuck.
I knew about hanging pants on hangers — but did not know the roll and tuck no nonsense – makes perfect sense.
Now I do – and so do you – it’s gonna be happening in my world.

RECIPES:

  • HELLO PINEAPPLE WHIP!
Refreshing little something mid-afternoon or first thing in the morning.
  • MANGO JICAMA CUCUMBER SALAD
Move over lettuce salad.  New player has arrived for a  summer side.
  • WATERMELON JALAPENO BRUSHETTA
Holy Camoly – talk about super star status for an appetizer!
  • EASY FETTUCCINE ALFREDO
Lots of things I love about this recipe – my 2 favorite takeaways are:
#1 Being sour cream vs. heavy whipping cream
    #2 Easy and Fast
  • BLUEBERRY BANANA BREAD
I wouldn’t include a banana bread recipe ever.  We all have our favorite banana bread recipe.
    However!  The addition of blueberries?
Yeah.  I’m paying full attention to this combo.
    Gotta be outstanding.

I BELIEVE …

  1. That sometimes when I’m angry
I have the right to be angry,
    but it doesn’t give me
    the right to be cruel.
  2. Just because someone doesn’t love
you the way you want them to doesn’t
mean they don’t love you with all they have.
  3. Maturity has more to do with
what types of experiences you’ve had
and what you’ve learned from them
and less to do with how many
    birthdays you’ve celebrated.
  4. It isn’t always enough to be
be forgiven by others.  Sometimes you
have to learn to forgive yourself.
  5. No matter how bad your heart is broken
the world doesn’t stop for your grief.
  6. Our background and circumstances
may have influenced who we are,
but we are responsible for who we become.
  7. You shouldn’t be so eager to find out a
secret.  It could change your life forever.
  8. Two people can look at the exact same thing
    and see something totally different.
  9. Your life can be changed in a matter
of hours by people who don’t even know you.
  10. Even when you think you have no more to give,
when a friend cries out to you, you will find
    the strength to help.
  11. We don’t have to change friends
if we understand that friends change.
  12. No matter how good a friend is,
they’re going to hurt you every
once in a while and you must forgive
    them for that.
  13. True friendship continues to grow,
    even over the longest distance.
    Same goes for true love.
  14. We are responsible for what we do,
    no matter how we feel.
  15. That either you control your attitude
    or it controls you.
  16. Regardless of how hot and steamy a relationship
is at first, the passion fades and there
better be something else to take its place.
  17. Heroes are the people who do what has to be done
when it needs to be done, regardless of the consequences.
  18. My best friend and I can do anything
or nothing and have the best time.
  19. Sometimes the people you expect to kick you
when you’re down, will be the ones to help you get back up.

Frank Deshandol’s amazing photos prove that nature has some truly amazing creatures – both in form and in color composition. Outstanding!

I Believe – a wonderful recipe for life.

I don’t usually crave pasta in the summer time, but lately my taste buds have been shouting PASTA. And the oh-so-simple fettucine Alfredo recipe will definitely ease my craving. I also like that it calls for sour cream, not whipping cream. Yum, yum! Can’t wait to try.

As usual, a wonderful start to the week!

  2. Marty says:

I’m with Carol on the fettuccine pasta. I also love it and the simpler the recipe (Thanks Daymaker) the more I enjoy it. I recall the first time I ate fettuccine . We were vacationing with my brother and his wife in Estes Park, Colorado in 1980. Kay ordered fettuccine and I recall asking her what in the world did she order? She described it and I said, “Ok, I will try it too. ” That was all it took to fall in love with the flavor. The simpler the recipe the more I like it. Now add a little salad plus great bread and BINGO everybody at the table is happy. Well, hold up, there’s always room for one more request. “Could you bring the dessert menu please?”
