Friday is a smiley face and a wave that the weekend is just around the corner — the anticipated time we enjoy, pause, chill and reflect.
How has your week been?
It’s been crazy warm here!
Up and down in 60’s and 70’s and then — 80 yesterday.

It’s just the beginning of February, right?
No complaints here – I’ll take moderate temps over frigid temps!
All of these warm temps inspired me to jump into a spring cleaning mode.
Accomplished tasks that I’d been putting off for much too long.
Slack?
I must truthfully answer, “yes.”
Less than exciting things like: cleaning out a few closets (purging), getting down on my hands and knees and wiping down base boards and then going outside to dig up and purge uninvited grass, which was totally on a mission to be fruitful and multiply, in my flower gardens.

During a visit to my doctor, I asked, “How do you determine whether or not an older person should be put in a Care Facility?”
“Well,” he said. “We offer a teaspoon, a tea cup and a bucket and ask, ‘What’s the best way to empty the bathtub?'”
“Oh,” I understand, I said. “A normal person would use a bucket because it’s bigger than a teaspoon or a tea cup.”
“No,” he said. “A normal person would pull the plug in the tub. Do you want a bed near the window?”

As the story goes …
Many years ago, when I worked as a volunteer at a hospital, I got to know a little girl named Liz who was suffering from a rare and serious disease.
Her only chance of recovery appeared to be a blood transfusion from her 5-year-old brother, who had miraculously survived the same disease and had developed the antibodies needed to combat the illness.
The doctor explained the situation to the little brother and asked the little boy if he would be willing to give his blood to his sister.
I saw the little brother hesitate for only a moment before taking a deep breath and saying, “Yes, I’ll do it if it will save her.”
So the procedure was scheduled.
As the transfusion began and progressed, he lay next to his sister and smiled, as we all did, watching the color returning to her cheeks.
Then his face grew pale and his smile faded.
He looked up at the doctor and asked with a trembling voice, “Will I start to die right away?”
Being young, the little boy had misunderstood the doctor; he thought he was going to have to give all of his blood to his sister in order to save her.

GREEN CHILE SOURDOUGH CASSEROLE OMELET
This is a grand dish for a weekend brunch or even breakfast for dinner.
It’s very flexible: you can add diced ham or smoked turkey, smoked salmon, different cheeses (think dill Havarti or swiss), sauteed spinach or sauteed kale. Be creative.
HERE’S HOW WE MAKE IT
INGREDIENTS:
- 1 loaf of sourdough bread (about 1 pound)
- 1 stick butter, melted (think microwave)
- 8 ounces cream cheese, cut into small cubes
- 16 ounces jalapeno jack cheese, grated
- 3 – 4 ounce cans, diced green chilies, undrained
- 8 eggs
- 2 cups whole milk
- 1/2 tsp dry mustard
- 1/2 tsp salt
- 1 TBSP fresh chives
- 1/2 tsp cayenne pepper
PREPARATION TIME:
- Slice sourdough bread and remove crusts.
(Save crusts for bread crumbs in another recipe or toss in the yard for birds) - Grease or Pam spray a 9″ x 13″ baking dish.
- Put the bread cubes in baking dish.
- Pour the melted stick of butter over bread cubes.
- Sprinkle small diced cream cheese evenly over the bread.
- Do the same with shredded cheese and cans of green chilies.
IN A SEPARATE MEDIUM SIZE BOWL:
- Whisk milk, eggs, dry mustard, salt, chives and cayenne pepper until smooth.
POUR OVER THE BREAD CUBES IN CASSEROLE BAKING DISH
COVER WITH FOIL AND REFRIGERATE OVERNIGHT.
NEXT DAY:
- Preheat oven to 350*
- Bake casserole – still covered with foil – 1 hour.
- Remove foil – and bake an additional 15 minutes.
REMOVE FROM OVEN AND LET REST ON THE COUNTER ABOUT 5 MINUTES
SERVE WITH:
ORANGE AND APPLE SLICES ON THE SIDE FOR BRUNCH
SMALL BUTTER LETTUCE SALAD FOR DINNER
