FROM THE STREETS TO STARDOM

And the story goes …
Guy Laliberte ate fire on the streets of Montreal, played accordion, walked on stilts … all to entertain and amuse passers-by.  Plus making a little spending money from tips.

Laliberte, Canadian born artiste, gambled by bringing a successful troupe from Quebec to the L.A. Arts Festival in 1987, with no return fare.  The bet paid off, and the circus group eventually moved to Las Vegas, where they became the world famous troupe we know now as CIRQUE DU SOLEIL.

Liliberte became the CEO of CIRQUE DU SOLEIL, a professional poker player and a space tourist with a net worth of about $1.3 billion.

GRILLED PINEAPPLE SALSA
MAKES ABOUT 4 CUPS

The next time you’ve got the grill going, give this recipe a shot.  Grilling caramelizes some of the sugar in the pineapple and gives it a nice smoky flavor.  This salsa will go with anything else you decide to grill.

HERE’S HOW WE MAKE IT
INGREDIENTS:

1 ripe pineapple

1 large red bell pepper, roasted, peeled and diced into 1/4″ pieces (or make it easy and buy a jar of roasted peppers at the market)

2 TBSP freshly squeezed lime juice

1/4 cup finely chopped cilantro

1/2 tsp salt

1/2 tsp black pepper

1 – 2 TBSP canned Chipotle puree  (unfamiliar with Chipotle puree?  **here’s how to make it **)

NOW

Start the coals in a charcoal grill or preheat a gas grill.  Cut away the pineapple skin, but do not core the pineapple.

Slice the pineapple in 1/4″ – thick rings and grill for 2-3 minutes per side, or until crisscross grill marks appear on both sides.  The grill marks should be a deep brown color, not black.

Remove from the grill and set aside to cool.  When cool, dice the grilled pineapple rings into 1/4″ pieces, cutting away the core as you dice.

Combine all the ingredients, except the Chipotle puree, in a mixing bowl and mix thoroughly to blend the flavors.  Add the puree 1 tsp at a time, until the salsa is as spicy as you like.

Serve chilled.

    I did not know that about Cirque de Soleil I love the background story pretty amazing.

    I saw the show when we were in Vegas and it was absolutely stunning — thanks for the background always learn something new here.
