Summer Time Fair Fun

Brrrrr — It’s been a little chilly at night.
Dipped in the 40’s the other night.

I re-established my electric blanket so the room can be cool but I’m warm underneath the blanket.

So much delight to present today!

    We had so much fun and I got to chime in by invite to Stacy’s World column today — Cheryl’s Adventure at Flair at the Fair.
    Only regret is that I ran out of picture room to put in all the smile worthy pictures we took at the fair here on Daymaker’s post.
    Hopefully, the pics presented today convey what we experienced!
    It was a totally happy day with one another and so many others whom we’d never met before — all of us hanging out at the Texas State Fair having a grand time.
    As it’s been said — Pictures Speak Louder Than Words.

  • QUICK QUESTION
    My favorite fair food is hands down corny dogs.
    (( Fun Fact – where I come from we call corny dogs … Pronto Pups ))
    I can pass up cotton candy, candy apples, caramel apples, turkey legs, burgers…
    But I just cannot leave the fair without having a proper corney dog dipped in plenty of yellow mustard!

    Is amazingly good.
    Move over spinach artichoke dip.
    This soup puts an entirely new spin on the winner-winner combo of spinach and artichoke.
    Don’t forget to make the pita chips side kick for dinner memorable!

THE FLAIR AT THE FAIR

Hey Y’all!

It’s Flair at the Fair time of year!

I love when I first walk into the fair through the main entrance and enter the tree lined street and feel the excitement, hear the laughter and smell all the foods!

This year was especially fun because Cheryl joined Rick (my husband) and me to help find cool people with Fair Flair and cool fair exhibits.

I love seeing (and tasting) everything at the fair — but I must say the people watching is the most interesting to me!  I especially like to check out what people are wearing.

This year cowboy boots were definitely “In Vogue” for 2024 at the fair.

We saw cowboy boots everywhere — with shorts, long skirts, short skirts and, of course, jeans!

It’s so much fun approaching people who are dressed to be noticed and ask to take their photo for my Flair at the Fair column!  They giggle and smile and happily strike a pose.
Thanks all of you Beautiful People for allowing us to use your photos in this column.

CHERYL’S ADVENTURE
FLAIR AT THE FAIR

I must say it was an adventure indeed!
Good thing I had my running shoes on because it was full-throttle following Stacy and keeping up with her as she spotted and approached people, engaged with them and told them about DAYMAKER and asked permission for picture taking.

My contribution was to smile and wave,  shake hands and pass out DAYMAKER cards.

It was a blast!

And, yes, Rick was a great sport in our Flair at the Fair afternoon endeavor to gather pics, meet and greet and share laughs with all whom we engaged with for today’s Stacy’s World column.

Stacy’s a natural with people.
I’ve always considered myself the same — however, I totally rode shotgun/passenger on this Flair at the Fair adventure.
She had it dialed in and it was super cool to be part of the day and her column-collecting fun.

When my family eats dinner they always bless their food.
But they never bless mine.  So, I’ve been wagging my tail
extra fast when they fill my bowl.  Have you been noticing
my own blessings?

The new terrier I live with just peed on the Oriental rug
and I have a feeling my family might blame me because
they think I’m jealous of this stupid dog.  Since they have
no sense of smell, how can I convince them that I’m
innocent?  Does the pet store sell lie detectors?

There is a lot of temptation here – cats!
Just so you know, God, I do not eat the cat’s food before
he eats it or after he throws it up.  Same goes for the litter
box — it is not a cookie jar *sigh*.  The cat is not a squeaky
toy; if we play and the cat makes squeaky noises, I back
way far away from the cat.

Question:
When you created cats, what were you thinking?
They’re lazy, shed like crazy and don’t even know how to
fetch a ball.  I just don’t get why they think they’re special.

SPINACH-ARTICHOKE SOUP

There’s a reason spinach-artichoke dip was a ’90s restaurant menu staple — it’s just so good!
In this recipe it makes the leap from a popular appetizer to an impressive dinner soup.

Total time: about 20 minutes

HERE’S HOW WE MAKE IT
SAUTE IN 2 TBSP OLIVE OIL;

  • 1 cup leeks, sliced
  • 1 TBSP garlic, minced
  • 2 cups cooked chicken, shredded (1/2 pound)
  • 1 – 13.75 ounce can artichoke hearts in water, drained and quartered
  • 2 TBSP flour

DEGLAZE WITH; STIR IN:

  • 1/2 cup dry white wine
  • 2 1/2 cups chicken broth
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 8 cups fresh spinach
  • 3/4 cup Parmesan, grated
  • salt and pepper to taste

SAUTE

  1. Leeks and garlic in olive oil in a large pot over medium-high heat.
  2. Cook until leeks are soft, about 2 minutes, then add chicken and artichokes.
  3. Saute about 3-4 minutes.
  4. Stir in flour and cook for 1-2 minutes — make sure the flour doesn’t clump.

DEGLAZE WITH

  1. Wine and simmer until nearly evaporated, scraping any bits from the bottom of the pot.
  2. Stir in broth, milk and cream, and bring to a boil.
  3. Reduce the heat to low.
  4. Add the spinach and Parmesan.
  5. Stir until spinach wilts.
  6. Season with salt and pepper before serving.

PIITA CHIPS

Makes 32; total time – 10 minutes

HERE’S HOW WE MAKE IT:

  • 1 tsp salt
  • 1/2 tsp Paprika
  • 1/4 tsp Cayenne pepper
  • 4 rounds prepared (store bought) Pita bread
  • olive oil

PREHEAT OVEN BROILER TO HIGH

COMBINE
Seasonings in a small bowl.

LIGHTLY BRUSH
Pitas on both sides with oil and sprinkle with seasoning mixture.

TRANSFER PITAS
To a baking sheet and broil until golden, 2 minutes per side.

REMOVE FROM OVEN
Let rest 5 minutes.

CUT
Each pita into 8 wedges.

    Wow! Wow! Wow! You and Stacy totally rock! What great photos you took at the Fair! I can just imagine all the happiness you spread as you engaged with folks and took their pictures. And to have Rick along to guide and support and interact – awesome! Please please please make the Flair at the Fair an annual column. . .

    Yes, corny dogs have to be the favorite Fair food, if only because the Fair IS their venue. They aren’t readily available other places and, when they are, they just don’t taste the same. Something about their freshness, the crowd sounds, the music, the people – it all adds to the ambience!!!

    I’m totally in for the Spinach Artichoke Soup. As much as I love the dip this soup sounds soul warming and yummy.

    Oh my, such fun you and Stacy had at the state fair! Thanks for the photos and the excitement of engaging with people. Can you imagine going to the State Fair and NOT engaging with people? It’s too painful to even think about. It would be like Santa bringing you a sleigh full of gifts and you are too scared to open them!

    — Oh, you asked “favorite food” at the fair? First of all, we go for all day at the fair… so we start with corny dogs and then weave our way to the Demo tent — I love watching people demo products and to the animal barns and then the horse arena and then … “Roll the drums” the BBQ foods! Now that’s a mighty perfect day.

    Thanks Daymaker for sharing your fun as it brought many happy memories.
